Quick and Easy BBQ Appetizers
With a tupperware full of left over pulled pork sitting in the fridge, I decided to make a quick appetizer for dinner the other night.
For those of you who have yet to discover them, frozen mini puff pastry shells such as those offered by Pepperidge Farm are a great way to create simple yet tasty starters.
Simple separate the bite sized pieces of frozen pastry, place on an ungreased cookie sheet, and heat in the oven for 20 minutes. Remove, cook, then using a butter knife, pop out the center perforated portion to create a nest for whatever goodness you decide to add.
In this case, I simply chopped the pulled pork, mixed well and heated, then added a dollop to each shell. A drizzle of Blues Hog BBQ sauce, a fine dusting of dry rub and they were ready to serve. Pickled red onions or a vinegar slaw would also add a nice bite to the appetizers.
