Bacon Eggstravaganza

Happy TGI Fryday world wide webbers!  This entry is extra special because it happens to be Smoke In Da Eye's tribute to Bacon Salt and Baconnaise.  For those unfamiliar with these fine bacony products, check out our interview with the creators, Justin and Dave here, as well as a recipe for Bacconaise rubbed ribs here.

Today, I'm frying up the ultimate breakfast delight, the deep fried, pork rind crusted, Baconnaise deviled egg

Now let's fire it up!  To create this devilishly delightful bacon eggstravaganza, I took a shelled hardboiled egg, cut it in half and removed the yolk.

In a small bowl, blend together the yolk, 2 teaspoons Baconnaise, 1/8 teaspoon dry ground mustard, 1/8 teaspoon white vinegar and salt and pepper to taste.  Fill centers of egg white halves with yolk mixture and press together to create a complete egg.

In an effort to take this already decadent delight to a whole other level, the egg is rolled in a combination of Panko and ground pork rinds.

In individual bowls, add 1/4 cup flour seasoned with 1/2 tablespoon of Hickory Bacon Salt, one beaten egg in the second, and a 50/50 mixture of Panko (Japanese breadcrumbs) and ground pork rinds.  Gently coat the egg in flour mixture, then egg then Panko.  Using a slotted spoon, gently lower egg into a preheated 350 degree deep fryer.  Fry until golden brown, remove and rest on paper towels until cool.  Add a dollop of Baconnaise to the top and enjoy!

Note, eggs do not need to be reassembled for frying, though the presentation is cooler with a whole egg.
