Cooking with Convection

Recently our good friend Todd at Plowboys BBQ featured something on his site called the Grill Innovations Gas Grill Plate, a 100 percent aluminum plate designed to offset direct heat and create a convection style cooking environment on your grill.

Convection grilling, you ask?  Indeed.  For those out there who use their grills for more than simply charring a couple hamburgers and hot dogs each Fourth of July, better heat distribution on the grill offers countless possibilities including pies, casseroles, cookies, etc.  So in theory, the grill plate is a great idea.  Turn your grill into an oven.  But does it work?

For it's inaugural run, we decided to follow Plowboys' lead and create a batch of enchiladas.  As instructed, we heated the grill to temperature then placed the grill plate on the grates and set the glass baking dish on top.  We then closed the lid and left it untouched for 20 minutes.  Upon opening the lid, we found perfectly cooked enchiladas, with the cheese bubbling away and zero signs of scorching on the bottom. 

Success!  We then proceeded to cook our Easter ham on the plate with similar results (while creating much needed spare oven space for the holidays!) and created an awesome platter of sweet pepper poppers, the recipe for which will follow shortly!  In the meantime, definitely take a second and check out the Grill Innovations website at www.grillinnovations.com.

    This grill plate thing is great. I love all baked foods, but especially my Wife's recipe cornbread. It cooks perfectly on the grill plate and keeps the heat outside.
