Go Fish

Deep fried smelt.  If you've never had em, you better get em.  The wonderful thing about smelt is they are so small, you can eat them whole.  And while they can be tough to find fresh in many parts of the country, we have seen them frozen at several grocery stores in the seafood section.

This TGI Fryday, we whipped up a batch, dusting defrosted smelt in seasoned flour, a light coating of beaten eggs, then rolled in honey flavored panko and fried until golden brown.   Smelt were drained then served with a spicy remoulade sauce.  Enjoy!
