Bayou Wings

Recently, a good friend passed along a box of barbecue rub and sauces from Bayou Barq, a relatively new brand out of Louisiana.  Both the tomato sauce and the mustard sauce have won at the uber prestigious Memphis In May contest so we were expecting something really special.  And the Bayou boys delivered!

First we rubbed down a mess of wings with the Bayou Barq dry rub (a nice blend of sweet and heat) then smoked them at 250 degrees for approximately 1 1/2 hours flipping occasionally until nicely crisped.  Meanwhile we heated the Bayou Barq red sauce and threw in a touch of unsalted butter to help ensure the sauce stuck well to the wings. 

Pour the sauce in a metal mixing bowl, add wings, toss and serve.  The wings were devoured in a matter of moments and the remaining sauce is waiting in the fridge for its next adventure.  In fact, the flavor balance is so spot on, we may need to consider this as a future competition sauce!  The mustard sauce also has a nice tang to it and would be perfect on seafood.

Unfortunately we do not have retail information yet for the rubs and sauces but will update our loyal followers as soon as we have it!  In the meantime, here are some pictures (check out the fancy die cut box!).
