Sweet Ribs of Mine

Before we get back to our week long series on Labor Day recipe ideas, we wanted to shift gears back to the world of competition barbecue.

 

As previously mentioned here, Smoke In Da Eye competition barbecue team is fortunate enough to be included for the first time ever in tomorrow's draw for the 2009 Jack Daniel's World Championship Invitational Barbecue.

 

And if we don't get chosen to represent the best of the best this year?  We will be packing our bags and heading to Kansas City for the equally prestigious American Royal Invitational held in early October.  Either way, cross your fingers and tune back in late tomorrow to see if we are included among the 70or so teams making the trek to Lynchburg, TN!

 

Now, on to the food...  In anticipation of the end of Summer, we have asked various friends to provide a variety of cool recipes(others can be found here)to help make our Labor Day a tasty festival of flavor. 

 

Today, the fine folks at RecipeLion.com offer up their unique Summer grilling twist,pairing perfect barbecue ribs with the sweet taste of apricots.  And the results?  Phenomenal!


Sweet Apricot-Sauced Ribs

(serves 4)


Ingredients

4 pork spareribs, cut into serving-size pieces

8 ounce can undrained apricot halves

3 catsup

3 brown sugar

2 lemon juice

1 tablespoon Dijon-style mustard

1 teaspoon dry ginger

Dash salt


Instructions

1.Bank medium-hot coals in covered grill with peach or apricot chips or chunks.

2. Place ribs on grill over drip pan, cover grill and cook ribs over direct heat for 1 1/2 hours, turning occasionally.

3. Meanwhile, mix remaining ingredients together in blender.

4. Brush ribs generously with sauce and continue to cook, about 30 minutes,basting and turning over.
