Grillin Up a Mess of Sandwiches

Continuing our week long Labor Day explosion (more recipes here),today we have partnered with our good friend and Next Food Network Starcontestant Kevin Roberts to offer up three kick ya in the butt awesome grilledsandwiches.  Kevin, a.k.a. “The Food Dude,” is author of Munchies and Kissing in the Kitchen.   So check them out andperhaps you'll be inspired for the $25,000 sandwich contest mentioned here.

Today, Kevin is offering up a Grilled Cuban Sandwich, a Grilled Reuben Wrap and a Grilled Catfish Sandwich.  Three times the flavor three times the fun with the Food Dude!

GRILLED CUBAN SUB

Ingredients:

2 loafs hero-styleFrench bread

4tablespoons French’s® Yellow Mustard

4 Vlasic® KosherDill Stackers

4 slices, Swisscheese

6 slices,Virginia ham

4tablespoons roast pork, chopped or pulled

 

Directions:

1. Half thebread lengthwise.

2. Spreadthe mustard on both sides.

3. Add 2pickle slices per sub on top of the mustard, then add the Swiss cheese on topof them.

4. Fold hamin half and add evenly. Then add the pork on top of the ham.

5. FoldSubs together and grill until bread is nice and toasty and cheese is melted.

(You canplace a large, heavy pan on top while grilling to make this a true Panini!)


 

GRILLEDREUBEN WRAP

Makes 2wraps

 

Ingredients:

2 tortillas

3tablespoons Thousand Island dressing

6 slicescorned beef

2-4tablespoons sauerkraut

4 slicesSwiss cheese

 

HomemadeThousand Island Dressing:

2tablespoons mayo

2tablespoons Vlasic® Dill Relish

2tablespoons ketchup

Mix equalingredients together in a small bowl.

 

Directions:

1. Laytortilla on counter and spread with Thousand Island dressing.

2. Addcorned beef, sauerkraut and cheese evenly across the wrap.

3. Roll upand grill seam side down so it doesn’t unwrap until tortilla is crispy, meat iswarmed and cheese is melted.

4. Cut on abias, which is just a fancy term for cut in half at an angle.

 

Thetenderness of the catfish with the crunch of the relish makes this sandwichgreat for those long summer nights.

 

GRILLEDCATFISH SANDWICH WITH DILL RELISH

Makes 2sandwiches

 

Ingredients:

1 poundCATFISH, de-boned and grilled

1tablespoon, Old Bay Seasoning

½ cup, MAYO

2 Vlasic® KosherDill Pickles, finely chopped

1 sprigfresh dill, minced

1 teaspoonhot sauce(use your favorite)

Salt andpepper to taste

2Torpedo-style rolls, warmed, cut in half

 

Directions:

1. Clean,season and grill the catfish until flakey.

2. In amedium mixing bowl, make the relish by adding the mayo, pickles, dill, hotsauce, salt and pepper. Mix well.

3. Heat therolls up on the grill or oven.

4. Buildyour sandwich by adding the fish, then relish.
