The Parade of Grilled Sandwiches Continues

Following the success of yesterday's feast of grilled sandwiches (find them here), we've turned to the folks at Boars Head for three more great grilled sandwiches in anticipation of tomorrow's Labor Day feast, including a Grilled Cotto Ham, Gouda, Picante Provolone and Sopressata Sandwich, an All American BBQ Chicken Panini, and a Grilled Maple Glazed Chicken Sandwich.

Note that while these recipes call for grilling in a pan, we love to wrap them loosely in tinfoil, place on a medium high grill and place a brick, paving stone or cast iron pan on top to press it down.  Toast 3-4 minutes, flip and repeat.  Remove from foil and enjoy!


Grilled Cotto Ham, Slicing Gouda, Picante Provolone & Sopressata Sandwich


Ingredients

oz

Boar's Head Sopresatta, Sliced

3

oz

Boar's Head Gouda Cheese, Sliced

4

oz

Boar's Head Picante Provolone Cheese, Sliced

1

cup

Boston Lettuce

3

tbsp

Capers, Finely Chopped

3

tbsp

Green Olives, Finely Chopped, Pitted

3

tbsp

Pepperoncini, Minced

3

tbsp

Butter, Softened

½

cup

Olive Oil

8

slices

Sourdough Bread

4

oz

Boar's Head Cotto Ham

 

Directions

Whisk the olive oil, white wine vinegar, shallot and oregano together, set aside.

Mix olives, capers and pepperoncini together in a small bowl, set aside.


Place the bottom half of the bread on a clean, flat work surface and layer the ingredients in the following order evenly on the bread:

Picante Provolone

Sopressata

Cotto Ham

Olive relish


Top with the remaining piece of bread, butter the top and bottom of the bread. Place sandwich in a medium hot skillet and using another skillet, press the sandwich to compact slightly. Cook about 5 minutes or until golden and bubble.

Remove from skillet and lift off bread top, layer the Slicing Gouda, Boston lettuce and dressing. Press top back on and cut in quarters.

All American BBQ Chicken Panini

 

Ingredients

2

slices

Boar's Head Bacon

1

oz

Boar's Head Monterey Jack Cheese with JalapeƱo, Sliced

2

slices

Tomato

 

 

Boar's Head Sweet & Mild B-BQ Sauce, To Taste

 

 

Peppercorn Ranch Dressing, To Taste

slices

RUSTIC WHITE BREAD

4

oz

Boar's Head All American BBQ Chicken, Sliced

 

Directions

Spread a small amount of BBQ sauce on the bottom slice ofbread. Add the ingredients to the bottom slice of bread in the following order:

All American BBQ Chicken

Tomato

Bacon

Monterey Jack Cheese

Spread a small amount of Ranch dressing on top slice of bread and crown sandwich. Toast until golden brown or until cheese is melted.

 

 

Grilled Maple Glazed Chicken Sandwich


Ingredients

2

oz

Boar's Head Colby Jack Cheese, Sliced

5

slices

Granny Smith Apple, Thinly Sliced

1

oz

Boar's Head Honey Mustard

1

oz

Butter, Softened

2

slices

Whole Wheat Bread

3

oz

Boar's Head Maple Glazed Roasted Chicken Breast, Thinly Sliced

 

Directions

Spead softened butter on one side of each piece of wheat bread. Place bread butter side down, on a clean flat work surface.  Spread honey mustard on bottom slice of bread and add chicken,apples and cheese.  Top with remaining piece of bread, butter side up.  Preheat pan or griddle and heat for 2-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
