Pork Pullin Pizza

One thing that is great about competition BBQ is the leftovers!  Recently, we were looking for a creative way to use up the mountain of pulled pork we brought home from our last contest and while the thought of making another ultra delicious pulled pork lasagna was enticing, we needed to make something a bit quicker...a barbecue pizza (recipe can be found below).

Pulled Pork Pizza
1 store bought pizza crust, ala Boboli
2 cups pulled pork
2 cups of your favorite barbecue sauce
2 cups of your favorite tomato sauce
Dry rub
8 oz bag shredded mozzarella cheese
Grated Parmesan
Olive oil

Place pizza stone* on grill or smoker and heat to 450 degrees.  Meanwhile, combine tomato sauce and pizza sauce, blend and heat.  Brush crust with olive oil then assemble pizza by adding sauce, followed by pork, mozzarella, grated Parmesan and a dusting of dry rub.  Place pizza on pizza stone, close lid and allow crust to brown and cheese to melt, approximately 10 minutes.  Remove, slice and enjoy!  (* You can also cook the pizza directly on the grill grates but check the bottom after 5 minutes and rotate to ensure even browning).
