Drunken Banana Fritters

Happy TGI Fryday!  This week takes us to Miami’s own Ortanique on the Mile where Chef Cynthia Hudson wows the crowds with her bold Caribbean flavors.  But according to Chef Hudson, the real star of the menu is something she lovingly refers to as Drunken Banana Fritters with Crispy Beer Batter Fritters Dusted with Cinammon ‘n Sugar Topped with Rum Raisin Crema and Vanilla Ice Cream.  What a delicious mouthful!!

Banana Fritters with Crispy Beer Batter Fritters Dusted with Cinammon ‘n Sugar Topped with Rum Raisin Crema and Vanilla Ice Cream

BANANA FRITTER BATTER

Yield: 1 Quart

INGREDIENTS:

3 cups all purpose flour

1tbsp   Sugar

1½ cup beer (light, i.e. Corona)

2 eggs – separated

2 tbsp butter, melted

½ tsp salt

PREPARATION:

Combine all of the dry ingredients first.  Add the egg yolks. Whip the whites until stiff. Add the beer to the flour mixture, then fold in the egg whites and melted butter.  Let batter sit for ½ hour before using.

4ea Bananas, cut in half lengthwise and then in half horizontally 

½ cup Dark Rum

2 tbsp Sugar

½ cup Sugar, granulated

2 tbsp Cinnamon, ground

8 oz. Heavy Cream

¼ cup Sugar

1 tsp Vanilla

PREPARATION:

Mix sugar and cinnamon and reserve to coat fritters.  Combine bananas, sugar and rum.  Coat macerated bananas with butter and deep fry until golden brown.  Remove fritters and place on paper towel to absorb excess fat.  Coat bananas with cinnamon and sugar mixture.  Serve with vanilla ice cream.

Mix heavy cream in a cold stainless steel bowl adding sugar and vanilla
