Spreading the Pimento Cheese Love
While enjoying the sights, sounds and flavors of the eighth annual Big Apple BBQ Block Party last weekend, we had the opportunity to make some amazing new friends including Drew Robinson and the crew from Jim 'N Nick's Bar-B-Q.
Now in addition to being all around great people, these folks came bearing some amazing food and drink including their own beer, their own sausage AND the best darn homemade pimento cheese ever! Having had some truly awful store bought pimento cheese in the past, the thought of messing up a great sausage with the stuff wasn't that appealing at first. But then you spread a little on a cracker, add a slice of the sauce, a drizzle of their sauce and a slice of serrano pepper and bite in to a flavor explosion!
And while the sausage is long gone, Drew and crew were kind enough to share the pimento cheese recipe below for the world to try. Spread the love!

Old-school Pimento Cheese

1 lb. Grated Cheddar Cheese
1 1/4 cup Duke’s Mayo
1/2 tsp of Tabasco
1/2 tsp of Cayenne Pepper
10 oz. Fire-roasted Red Peppers
Mix ingredients, then mingle the flavors. Great troweled into a celery rib, slathered on a burger or spooned onto a saltine, then topped with a Jim 'N Nick's spicy pork hot link.
